Tofu Skewers with Satay Sauce
Ingredients
Tofu skewers:
1 (250g) pack tofu
2 tbsp sesame oil
2 tbsp soy sauce
1 large garlic clove, finely chopped or crushed
small piece of fresh ginger
Satay Sauce:
100g crunchy peanut butter
1/4 cup of vegetable stock
75 ml coconut milk
1 tsp soy sauce
1 tbsp sweet chilli sauce or honey
1 tsp fish sauce (optional)
Method
Cut the block of tofu into bitesize cubes and insert a skewer into each along the long length, and lay in a dish.
Drizzle sesame oil and and soy sauce over the tofu skewers, and sprinkle over with garlic and ginger. Marinade for an hour,turn occasionally.
Meanwhile, make the satay sauce. Add the sauce ingredients into a pan and then stir until thickened.
Place the skewers under a hot grill on a baking sheet, and cook for a couple of minutes, or until browned. Turn and cook the other side.
Serve the sauce in a small dish on the side and place the tofu skewers with little mounds of rice and carrot and cucumber sticks or stir fried vegetables of choice on your plate for dipping
